Leftover turkey or ham at the holidays--what to do!

Sandwiches are great--even with the cranberry smoothed over the roll as mayo.

But there is something that most everyone can think of or remember on what to do with all those leftovers. ;o)

It's like a Lasagna--lol

Start with corn tortillas--white or yellow--cut them into squares and lay them on the bottom of a casserole dish that goes with a lid.

Then layer the cut cubed turkey.

Then add a layer of Cream of Mushroom Soup--stir it in the can and spread it around.

Then a layer of Monterey Jack Chees or Sharp Cheddar--or both.

Add salt and pepper to taste.

Add Pepperchinos--to taste--some like it hot--some not so much.

Then do another layer of the tortillas, turkey, soup, and cheese, then pepperchinos.

Cook at 375 degrees covered until it bubbles.

If you like the Parmesan--add it for last 10 minutes.

If using a 9 x 12 dish something--it takes about 45 minutes.

Add a salad and salsa--it is wonderful!

Yum!

1 ham bone
1 chopped red onion
1 can chopped green chilies
1 package 15 bean soup

Salt to taste

EASY

Three to four cups cubed or chopped turkey or ham
One half cup chopped celery
One half cup DILL relish
Two cups mayo or one cup mayo and one cup ranch dressing

Mix well - serve on toasted rolls or buns

You may add chopped onions or grated cheese but may have to add more mayo to maintain a smooth and spreadable texture

Murphy - I make something like that only use green enchilada sauce instead of the soup - yours sounds 'licious!

And let the casserole set for 10 minutes after you get it out of the oven...

Turkey pot pie for the turkey
Hamloaf for the ham
And of course bean soup with the hambone

One Hefty bag

Place turkey in opened Hefty bag. Tie bag.
Walk to trashcan, place Hefty bag in can.
Let stand 2-3 days or until garbage truck arrives.

We always have a 20 pound Lasagna for Christmas. Nobody had any trouble with the leftovers as they were.

Meh, I just make a bunch of turkey salad sandwiches, and eat some of it reheated, and throw the rest away.

I sent the leftover ham home with my ex husband and his wife.

Problem solved. : )
